SPAGHETTI ROSSO DI MAZZARA WITH GARLIC INFUSED OLIVE OIL & WILD RED SHRIMP

INGREDIENTS

▢ 12 oz Bona Furtuna Organic Spaghetti
▢ 1 lb wild red shrimp (peeled & deveined, tails on or off)
▢ 4 tbsp Bona Furtuna Garlic Infused Olive Oil, plus extra for drizzling
▢ 3 garlic cloves, thinly sliced
▢ 1/2 tsp Bona Furtuna Sicilian Chili Flakes (adjust to taste)
▢ 2 tbsp fresh lemon juice
▢ 1/4 cup dry white wine (optional)
▢ Sea salt, to taste
▢ Fresh chopped parsley or basil, for garnish

DIRECTIONS

  1. Bring a large pot of salted water to a boil. Cook spaghetti until just shy of al dente. Reserve ½ cup pasta water, then drain.
  2. In a large sauté pan, heat 3 tbsp Garlic Infused Olive Oil over medium heat. Add the sliced garlic and chili flakes. Cook gently for about 1 minute, until the garlic is fragrant but not browned.
  3. Add shrimp to the pan and season lightly with sea salt. Sear for 1–2 minutes per side until just pink and opaque. Add lemon juice and optional white wine. Let it simmer for 30 seconds to blend.
  4. Add drained pasta to the pan with the shrimp and toss to coat. Drizzle in a bit more Garlic Infused Olive Oil and splash of pasta water until glossy. Taste and adjust seasoning.
  5. Plate with herbs and serve immediately, with a chilled glass of Vermentino or sparkling water with lemon. For a final flourish, add a drizzle of oil over each bowl before serving.
