Colomba pasquale, or Italian Easter Dove cake, is a sweet bread that is enjoyed throughout Italy during Easter celebrations. Much like beloved holiday Panettone, Italian Colomba cake is made through the use of carefully nurtured, naturally leavened yeast with which bakers use to ferment their dough, creating a supple texture to an otherwise rich sweet bread.
