Tender and savory, there’s no going back after your first bite of fresh squid. With a mild seafood flavor and delicate texture, the popular Mediterranean offering is high in protein, low in fat, and is a good source of mineral salts and vitamin B-12. While larger squid and octopus might require braising to soften its meat, small fresh squid are perfect when thrown right on the grill. Be sure to ask your fishmonger to clean the squid for you. We recommend marinating the squid for a few hours or overnight. Once you throw it on the grill, it cooks quickly and makes for a perfect appetizer or protein for a summery spread of salads and grilled fare.
GRILLED SQUID SKEWERS
Serves 6
INGREDIENTS
▢ 2 lbs squid, cleaned
▢ 4 tbsp Heritage Blend Olive Oil
▢ 1 tbsp Organic Oregano Flowers
▢ 6 cloves garlic, minced
▢ 1 tbsp Black Olive Tapenade
▢ Lemon to serve
▢ Herbs (parsley, tarragon, cilantro) to serve
DIRECTIONS
- Cut the squid into 1 inch thick pieces.
- Place squid, olive oil, oregano, garlic and tapenade in a bowl and mix to combine. Cover and refrigerate for at least 5 hours if not overnight.
- Preheat your grill to high heat. Skewer the marinated squid onto skewers and grill for 5-10 minutes per side depending on their size. Serve with fresh lemon and fresh herbs.
