Balsamic Macerated Cherries

A perfect way to thrill your guests with limited effort, macerating cherries in a velvety Balsamic Vinegar from Modena brings a depth of complexity and flavor to the sweet-and-sour fruit that you’ll want to recreate over and over again. Ladle the syrupy goodness over a freshly baked olive oil cake, honey-whipped yogurt, or even roasted pork or beef tenderloin for a show stopping finish. 

 

Balsamic Macerated Cherries with Honey Whipped Yogurt

 

BALSAMIC MACERATED CHERRIES

 

SERVES 4

 

▢ 1 lb cherries, halved and pitted
▢ 2 tbsp Invecchiato 7-Year Aged Balsamic Vinegar of Modena
▢ 2 tsp granulated sugar 

If You're Serving with Yogurt:  

▢ 1 cup full-fat greek yogurt
▢ 1/4 cup heavy whipping cream
▢ 3 tbsp Sulla Honey 
▢ Pinch of salt
▢ 2 tbsp fresh mint, julienned
▢ 1/4 cup toasted walnuts (optional)

 

DIRECTIONS

  1. Simply place cherries, balsamic vinegar, and sugar in a bowl and stir well to combine. Set aside for at least 1 hour.

If you're serving with yogurt: 

  1. In the bowl of a stand mixer, add the yogurt and whipping cream. Whip on high until fluffy but not yet stiff, (this should take about 5 minutes). Add the honey and a pinch of salt and continue to whip for another 2 minutes. 
  2. Serve the whipped yogurt with macerated cherries on top and sprinkle with fresh mint and walnuts (if using). 
  3. Mangiamo.
