SHREDDED KALE SALAD WITH SUN-DRIED CHERRIES & BEE POLLEN
Serves 4
INGREDIENTS
▢ 1 head of kale, chiffonade
▢ 1 shallot, minced
▢ 1 tsp dijon mustard
▢ 1 tsp Bona Furtuna Organic Wild Pine Tree Honey
▢ 1 lemon, juiced
▢ 1 tbsp champagne vinegar
▢ 4 tbsp Bona Furtuna Organic Everyday Olive Oil
▢ Salt and pepper, to taste
▢ 1/4 cup freshly grated Parmigiano Reggiano
▢ 1/4 cup sun-dried cherries, roughly chopped
▢ 2 ripe avocados, thinly sliced
▢ 2 tbsp Bona Furtuna Organic Bee Pollen

DIRECTIONS
- The key to this salad is chopping the kale as thinly as possible. This will make the leaves tender without having to take the time to massage each leaf. Wash it thoroughly, then strip the leaves from the stalks. Use your knuckles to help guide the knife as you slowly cut the kale into thin ribbons.
- In a small bowl, combine the shallot, honey, mustard, lemon, vinegar, olive oil, salt and pepper and whisk to combine.
- In a large bowl, combine the kale, Parmigiano Reggiano, cherries, and dressing. Toss well to coat, sprinkle with bee pollen, and garnish with sliced avocado to serve. Mangiamo.
