Playfully known as “The Princess Noodle,” Mafaldine are long ribbon shaped pasta noodles with ruffled edges. With wavy edges on both sides, our elegant ribbon shaped pasta holds sauce within each ruffled edge while offering a great al dente texture and elastic structure. Made from heirloom Sicilian grains, our pasta is more easily digestible so you can feel the nutritional benefits in every bite of our organic noodles. In Sicily, Mafaldine pasta is often used in “Timballo,” an Italian baked pasta dish, or prepared with swordfish or anchovies, tomato paste, pine nuts, and raisins. For a citrus twist, try “Mafaldine with Shrimp and Lemon.”



Ancient Grain Meets Modern Technology

Bona Furtuna Pasta celebrates the spirit of Italian land and tradition in every one of its unique pasta shapes. Sicily’s rich climate presents ideal growing conditions for many crops, including 100% organic, non-GMO grain. Perciasacchi and Russello are sublime heirloom wheat grains that grow tall, develop strong elasticity and create an authentic al dente texture in each organic noodle. Using modern practices, grain is ground domestically, rinsed minimally and repeatedly milled. Next, our mafaldine pasta is carefully shaped, cut by hand, and placed on racks to air dry in the Mediterranean breeze.
