This is like no other spice in your cabinet. The flavor it imparts to dishes is superb. It works especially well with pork but can be used with all sorts of other things. It's great in sauces. It imparts a wonderful aromatic flavor to pesto made with roasted tomatoes. It tastes like fennel but is more complex and ends in a citrusy finish. You simply have to try it. I'm sure it could work in sweet dishes as well. I also really like the packaging in the glass jar with the wide mouth. Yes, it's a bit pricey but worth it. A little goes a long way and there really is nothing else quite like it.

Red Hen Mezzi Rigatoni With Fennel Sausage Ragu
I found this recipe on one of my information sites. I used the fennel pollen and a really good passata. My wife and I loved it. Italian mild sausage as the meat. It was lovely. Gonna look for some more uses for this ingredient. Also made some garlic bread from my home made roasted garlic with fennel ciabatta. Perfect to soak up the sauce.
