
Grilled Portobello Mushrooms & Fennel Pollen
The earthy, smoky flavor and meaty texture of the portobellos combined with the zing of our Fennel Pollen make this an excellent meat substitute or side dish.
Imagine isolating a fennel seed, making it significantly sweeter and a hundred times more intense to the palate. Taste subtle hints of hay, honey and citrus balanced with zings of freshly ground anise in our Italian fennel pollen seasoning. To the nose, the aroma is musty with deep floral notes. The most potent form of fennel, the pollen gives a sense of terroir to a dish and instantly elevates flavor.
Long used in Italian cooking, fennel pollen is golden yellow with rustic green specks of magical flavor. Hand harvested from the Sicani mountains at La Furtuna Estate, organic fennel has hollow stems that bloom small yellow flowers. Pollen is collected from the flowers and tediously dried with a deft touch. Tiny and amber, a gingerly pinch of this fennel pollen spice is all you need to transform an average dish into supreme cuisine.

Hello Kathy! Keep exploring with the Fennel Pollen- we've discovered numerous delicious uses from other customers that we hadn't tried. Here's some ideas to try out with this magical sprinkle! -roasted pork or lamb tenderloin -roasted nuts -roasted veggies -salads -salmon or chicken -over yogurt & granola -on watermelon -avocado toast -eggs -pizza! (we can't have pizza without it)
I finally ordered and tried the fennel pollen after using Bona Fortuna products for two years. It’s like a summer salad in a jar. I have used it in my salads and they now taste like the ones in Sicily. I also use it on fresh watermelon and it adds such a depth to the sweetness of the fruit. The fennel flavor truly adds a rustic yet sophisticated flavor to your summer foods.

The Wild Foraged Fennel Pollen is so good, and versatile. It smells great. I've used on salmon, chicken, roasted veggies, salad. I buy raw nuts and roast them in the oven and a little of the pollen sprinkled on at the end is so good.
