Sicily’s rich climate presents ideal growing conditions for many crops, including 100% organic, non-GMO grain. Perciasacchi and Russello are sublime heirloom wheat grains that grow tall, develop strong elasticity and create an authentic al dente texture in each organic noodle. Using modern practices, grain is ground domestically, rinsed minimally and repeatedly milled. Next, our mafaldine pasta is carefully shaped, cut by hand, and placed on racks to air dry in the Mediterranean breeze.

Ancient wheat grains are heirloom varieties grown for generations without modern hybridization. What types of ancient grains are used in your pasta?

We use organic ancient Sicilian wheat grains Russello and Perciasacchi in our pasta. These native varieties are grown throughout Central Sicily and deliver rich flavor, higher protein content, and easier digestibility than many modern hybrid durum wheats.

Why is pasta cut from bronze dies better?

Bronze dies create a naturally textured, slightly rough surface on the pasta. This texture helps sauces cling more evenly, resulting in better flavor and a more satisfying bite compared to smooth, industrially cut pasta from stainless steel or teflon-coated dies.
