Amber, golden, translucent, creamy, sweet, herbal, floral, there is no shortage of adjectives available to describe nature's sweetest, purest candy: honey. For some, honey might just be the delicious bioproduct of the laborious honey bee's life. To others, it can serve as a biological map identifying the health and verdure of an entire ecosystem. For all of us, the stunningly diverse and unique nectar is a gift.

Native to the Monti Sicani region of Sicily, the Biancolilla Centinara olive tree species was thought to be extinct until a team of researchers at the University of Palermo, including our Chief Scientist and Master Botanist, Dr. Pasquale "Mimmo" Marino, rediscovered it. Self-pollinating and quick to produce fruit, Mimmo recognized the importance of this varietal and carefully nurtured the species to once again thrive in the soils of its heritage.

Home to hundreds of rare flora and numerous fauna species today, the mountains and its flowing rivers have become a vital ecological and heritage site for Sicily and are protected as a biopreserve.
