What is the importance of slow dried pasta?

Compared to conventional pasta, our pasta is dried more slowly, at lower temperatures, in a controlled space to monitor humidity levels. This improves the texture of the pasta, prevents surface cracking, and keeps the structural integrity of the pasta’s proteins intact so you get the perfect al dente bite every time.

How long will an open pasta sauce jar last in the refrigerator?

Do your sauces contain added sugar or preservatives?

Our pasta sauces are crafted from simple, organic ingredients with no added sugar or unnecessary preservatives. They showcase the natural sweetness and flavor of Sicilian heirloom tomatoes.

What is passata and how is it different from sauce?

Passata is pure strained tomato purée made from vine-ripened tomatoes with skins and seeds removed with a touch of salt added. It is a simple, smooth tomato base that you can enjoy on its own or build into your favorite marinara sauce.

Is your pasta enriched or fortified?

No. Our pasta is non-enriched and non-fortified, made simply from organic Sicilian heirloom wheat and water, with no added vitamins or minerals.

What are the health benefits of ancient grains?

Ancient wheat grains are naturally higher in protein and nutrients and have a simpler gluten structure than many modern hybrid durum wheats. While they are not gluten free, some people with mild gluten sensitivities find ancient wheat grains easier to digest due to their lower level of modification and traditional cultivation methods.

Why is pasta cut from bronze dies better?

Bronze dies create a naturally textured, slightly rough surface on the pasta. This texture helps sauces cling more evenly, resulting in better flavor and a more satisfying bite compared to smooth, industrially cut pasta from stainless steel or teflon-coated dies.

What types of ancient grains are used in your pasta?

We use organic ancient Sicilian wheat grains Russello and Perciasacchi in our pasta. These native varieties are grown throughout Central Sicily and deliver rich flavor, higher protein content, and easier digestibility than many modern hybrid durum wheats.

Ancient wheat grains are heirloom varieties grown for generations without modern hybridization. Where does your olive oil come from?

Our estate extra virgin olive oil comes from our farm, La Furtuna, in Corleone, Sicily. As part of our single-estate collection, it is made entirely on our farm, from harvest to bottle within 24 hours. We grow only organic, native Sicilian olives to produce our extra virgin olive oils.

How long will olive oil last with proper storage?

When stored properly and unopened, olive oil can last for years. We print best buy dates on every bottle to use for peak flavor, though while it may lose some freshness and flavor beyond this date, it remains safe and healthy to use. For the best taste, we recommend enjoying it generously 2-3 months after opening , as olive oil does not improve with age like wine.

How should I store my olive oil?

Olive oil should be stored away from heat and light to maintain freshness. Keep your bottle tightly sealed, in a cool, dark place like a pantry or cupboard. Avoid storing your olive oil near the stove or in clear glass.
